However, for Muslims who adhere to Halal dietary ethics, queries arise regarding its permissibility due to the presence of alcohol resulting from the process of fermentation.

Conceptualising Kefir and Its Fermentation Process

Kefir is derived by introducing kefir grains—a symbiotic culture of bacteria & yeast—into milk. This fermentation method transforms lactose into lactic acid, yielding a tangy flavour and a slight effervescence.

During fermentation, tiny amounts of ethanol (alcohol) are naturally made. Generally, commercially store based kefir contains between 0.1% and 0.5% alcohol, though levels can rise to over 2% if fermented longer at warmer temperatures.

Islamic View On Consuming Fermented Products

Islamic faith-based laws do not allow for the consumption of intoxicants, with a core emphasis on alcohol. The Prophet Mohammed (peace be upon him) stated,

“Every intoxicant is khamr and every intoxicant is Haram.”

Moreover, Islamic leaders differentiate between beverages that cause intoxication and those that do not. Foods & drinks that contain minimal alcohol levels that don’t lead to intoxication, regardless of the quantity consumed, are typically deemed as Halal.  

Rulings from Islamic Scholars and Institutions

The Standing Committee for Issuing Fatwas addressed the permissibility of consuming products with low alcohol levels.

They concluded that if the alcohol concentration is very small that consuming large quantities does not cause intoxication, the product remains Halal.

In addition to this, the Indonesian Ulema Council (MUI) debated the consumption of kefir. They concluded that if the fermentation process results in an alcohol content below 0.5% and does not cause harm, kefir is ok to consume.

They further highlighted that naturally occurring alcohol in fermented foods does not determine the product as khamr (intoxicant).

Points To Consider for Ensuring Kefir’s Halal Status

To make sure that kefir consumption adheres with Halal protocols, take into consideration the following:

  • Fermentation Monitoring: Control the fermentation timeline & conditions to stop the alcohol content from reaching levels that could cause intoxication.
  • Ingredient Verification: Make sure that all additives & flavourings administered in kefir production are Halal-certified and free from Haram elements.
  • Certification: Find kefir items that have been certified Halal by reputable organisations, providing assurance of compliance with Islamic ethics & laws.

While kefir can contain small trace amounts of alcohol because of its natural fermentation process, the overall thought amongst many Islamic theologians is that its consumption is Halal, provided the alcohol content is small and non-intoxicating.

Muslims interested in using kefir in their diets should be mindful of the fermentation process and choose products that adhere to Halal standards.
